Ingredients

For the Beef:

  • 900g Mrs. Garcia's Beef Ribs or 900g Mrs. Garcia's Beef Short Ribs
  • 5 cups Water
  • 1 pc White Onion (peeled and quartered)
  • 5 cloves Garlic (peeled)
  • 2 pcs Fresh Ginger (peeled, about 2-inch pieces)
  • 1/4 tsp Fine Salt

For the Braising Sauce:

  • 4 cups Reserved Beef Stock (from cooking)
  • 1/2 cup Soy Sauce
  • 1/3 cup Brown Sugar
  • 1 tbsp Sesame Oil
  • 1 tbsp Sesame Seeds (toasted)
  • 1/4 cup Green Onions (sliced)

Preparation Instructions

Step 1: Initial Cooking (30-45 minutes)

  1. In a large, heavy-bottomed pot, place the Mrs. Garcia's beef ribs along with garlic, quartered onion, ginger pieces, and salt.
  2. Add 5 cups of water, ensuring all meat pieces are completely submerged.
  3. Bring to a rolling boil over high heat, then reduce to medium heat.
  4. Cook for 30-45 minutes, regularly removing any scum or foam that rises to the surface with a ladle.

Step 2: Prepare for Braising

  1. Carefully remove the beef ribs and set aside on a plate.
  2. Strain the cooking liquid through a fine-mesh sieve and reserve 4 cups of this flavorful beef stock.
  3. Discard the cooked aromatics (garlic, onion, and ginger) or save for other uses.

Step 3: Braising (1-1.5 hours)

  1. Return the partially cooked beef ribs to the pot.
  2. Add the reserved beef stock, soy sauce, and brown sugar.
  3. Stir gently to combine and bring to a boil over high heat.
  4. Once boiling, reduce heat to medium-low, cover the pot, and simmer for 1 to 1.5 hours.
  5. Check periodically and turn the ribs occasionally for even cooking.
  6. The meat is ready when it's fork-tender and easily pulls away from the bone.

Step 4: Final Seasoning & Serving

  1. Taste the braising sauce and adjust seasoning as needed - add more brown sugar for sweetness or a splash of fish sauce for umami depth.
  2. Stir in sesame oil and toasted sesame seeds.
  3. Garnish with sliced green onions just before serving.
